Zuallererst besteht die Weizenstruktur aus dem Teil der \u00e4u\u00dferen Schale (Kleie), dem Kern (Keim) und dem Endosperm im Inneren.<\/p>\n<p>Endosperm macht mehr als 80% des Vollkorns aus. Das Wei\u00dfmehl, das wir in den heute konsumierten Wei\u00dfbroten verwenden, hat eine sehr geringe Effizienz. Da Kleie und Essenz in Wei\u00dfmehl getrennt sind, werden nicht alle N\u00e4hrstoffe gefunden.
